At the moment.


don't worry, i'm still here! ... just lacking in the posting department and rocking in the living it up department.  here's to catching up!

:: Obsessing over...
summer clothes.  no hair dryer. little or no make-up.  no ironing.  peeing when i please. 

:: Working on... 
curriculum writing for next year.  overwhelming, but sometimes it's good to have a little challenge.  inspired, but exhausted of this stuff!

:: Thinking about...
planning a vacation... for next year.  summer break is just too fun. 

:: Anticipating...
girl talk. this weekend, i get to catch up with some of my old roommates, and a good, good friend who is coming into town for a few days. can. not. wait.  oh, and it's father's day, and i'll get to see my dad, too! (what should i get him?!)

:: Listening to...
E! News.  i need to grow up.


:: Munching on... 
that's a salad i whipped up for dinner for one tonight, and it actually turned out good! (that doesn't happen often).  it's baked tilapia atop a bed of spinach, grilled corn, red pepper, fresh cilantro (from our garden!), flax chips, jalapenos and sour cream. whoa.

:: Thankful for...
my DF family.  after the DF reunion last weekend, i realize how lucky i am to have such wonderful teachers, mentors, friends and family who have supported my love of dance.  as our teacher stated, it was dance that brought us together, but really, it's about way more than that.  i must say, it was kind of scary showing up to the reunion after 8 years.  would anyone remember me? would anyone talk to me? maybe i'm just a nervous freak, but it was intimidating!  it was one of the most fun and refreshing weekends in a long while.

Food.

We've been trying some new recipes up in this house.

1. Cilantro Pasta Salad.

  • 1/2 Bag Bowtie Pasta, cooked
  • 2 cups spinach
  • 1/2 red onion, sliced
  • 1 red pepper, chopped
  • 1 cucumber, chopped
  • 1/2 bottle Cilantro Dressing (Trader Joe's)
  • 4 chicken breasts, boiled, shredded
  • 1/2 cup gorgonzolla cheese crumbles
  • salt and pepper to taste

2. Peanut Butter Cranberry Granola.

  • 10 cups rolled oats
  • 2 cups honey
  • 1 1/2 cups peanut butter
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup water
  • 3 cups coconut
  • 1/2 cup flax seed
  • 1/2 cup dried cranberries


3. Spinach Meatball Pizza.

  • Trader Joe's Spinach and Garlic Pre-Made Pizza Dough
  • Marinara
  • Trader Joe's Sundried Tomato Chicken Meatballs 
  • 1 cup spinach
  • 1 cup mushrooms, cooked
  • 1 TBS sundried tomatos
  • 1 8oz. package of fresh mozzarella cheese, sliced

Chicken Fajita Pizza.

I made that up... Tacos? Pizza? Burrito? This really could be any of those.


We ate this meal twice this week. It was super easy to make, and delicious! Hopefully fairly healthy as well.

Ingredients:
Flour tortillas (we used fresh made, and they were delish!)
Chicken
Red Pepper
Onion
Shredded Mexican Cheese
1 can green chilis
Sour Cream
Cumin
Salt

I sliced up the chicken and cooked it in a skillet with a dash of cumin for some spice. While that was cooking, I diced the red pepper and onion and cooked that in a different skillet with a tad bit of oil and salt until it started to get crispy on the edges of the onion.

One night we assembled tacos, the next night we made skillet "pizzas". The photos are from the pizza. Basically, I warmed the torilla on the skillet with a little cheese, then topped it with the chicken and vegetables. (The sauce is a mix of one can green chilis and about a cup of sour cream.)

We'll definitely be making these again. YUM!
