Savor the Sun.

Although I'm not a fan of the 95+ degree weather we've had around here, I must admit that the sunshine is fabulous! What a mood booster.
Plus, with the abundance of sunshine, sunglasses become a necessity.  And as if I didn't have enough pairs already, I've been drooling over this pair at JCrew Factory.  You can never have enough pairs, right?
And perhaps one of these would be nice, too. You know?  To enjoy the sunshine, while wearing the shades.  I can totally picture it...

Avocado Tuna Salad

Disclaimer: I promise that this tastes better than it looks.

I get in food ruts.  I'm pretty sure I've talked about this before, but I like to eat the. same. thing. for days.  Maybe even months.  Well, it's time to switch 'er up!  I've been trying some new lunch recipes that will be easy, healthy, and will last for a few days.

I saw a recipe in a magazine (either AllYou or Woman's Day... EEK!, can't remember...) for a Tuna Salad VERY similar to this.  I just didn't have all the ingredients, so this is my version.  I would describe it as Tuna Guacamole. Delish.

Recipe:
1 12 oz. can tuna (Chicken would probably taste fine, too)
1 ripe avocado, diced
1/2 Red Pepper, diced
1/2 c. red onion, diced
Juice of 1 lemon
2 Tbsp. Miracle Whip
1-2 Tbsp. Dill (fresh would be best)
Salt and Pepper to taste
Servings: 4

If you like a little spicy kick, some cayenne or hot sauce would be tasty as well!  

I ate this on a piece of toast, with crackers, with veggies, and just by itself.

Sunday.

Master's Exam Complete = SUMMER!

I've been taking lots of pictures, but haven't sat down to actually blog in a while.  I'm working on that :)  

Blueberry Pancakes.  I think yes.
I made these blueberry pancakes last Sunday.  I'm wishing I had some more right now... perfect weekend breakfast.   This was my first attempt at made from scratch pancakes.  I'm wondering why I haven't always made them homeade.  Super simple.... and delish.

Recipe: Adapted from this recipe.  I justed added a little more flour to make them fluffier and thicker.  And blueberries...duh.

 My plan for today.  And Sadie's too.

Savor the Challenge.

I guess it's time for a taste of my own medicine.  Summer for students = homework for teacher.

Today I will begin my master's final exam- one week to complete a three question essay.  Not my first choice in ways to begin my summer vacation, but a necessary one at that.  I have spent the past 3 years working towards this goal, and my gosh it will feel good to have it checked off the list.  It's hard to believe I'm finally at the end of this mission.  Here's to a week of reading, researching, writing, editing... and hopefully relief.

That being said, I will do my best to avoid blogland, pinterest, facebook.... and everything else that is awesomely distracting until this paper is submitted.

I have some fun projects in the weeks to come!
